MACROBIOTIC PRESSED SALAD RECIPE
Here is a recipe for PRESSED SALAD. This comes from Modern Day Macrobiotics. This is a wonderful refreshing dish for the summer and a lovely addition to anyone's macrobiotic diet. It is high in nutrients and introduces lots of healthy bacteria to your intestines.
This is quick and easy, requiring no cooking.
INGREDIENTS
Pressed cucumber, Chinese cabbage and radish salad
150g (5 1/2 oz) cucumber cut in half then thinly sliced
200g (7 oz) Chinese cabbage finely sliced
100g (3 1/2 oz) radishes thinly sliced diagonally
1/4 tsp. sea salt
Apple cider vinegar or brown rice vinegar.
Place the ingredients in a deeper plate, sprinkle the salt and work gently with your hands for a minute. Put another flat plate on top and weight (about 1kg). Use a bottle or a jar or something similar for weight. Keep for 10-15 minutes. Take the weight off but keep the plate. Hold the plates firmly together and tip them over a sink to get rid of excess water. Place in another serving bowl. This salad is very refreshing and delicious as it is but if you like you can season it with vinegar before serving. Sprinkle a tablespoon of pan dry roasted sunflower seeds for added flavour.
